Royal Dum Pukht

Our Story · Dudley

Rooted in desi kitchens, served with pride

Charcoal, spice and patience — the way our families have cooked for generations, brought to the heart of the High Street.

Where We Come From

A kitchen built on memory

Every recipe here began somewhere else — in courtyards and roadside tandoors, in family kitchens where the karahi never left the stove and guests were never allowed to leave hungry.

We grew up around that food. The crack of whole spices in hot oil. Lamb chops blistering over coals. A pot of rice sealed shut and left alone until the whole house smelled of saffron and smoke.

Royal Dum Pukht is our attempt to keep that intact — not softened for the high street, not shortcut for speed. Just desi cooking done properly, by people who genuinely love doing it.

The Royal Dum Pukht Kitchen

The Craft

Four steps we never rush

From marination to the final seal — this is how the flavour is built.

The Marination
01

The Marination

Yoghurt, garlic, ginger and hand-ground spice. Meat rests overnight so the flavour lives inside the cut, not just on it.

The Charcoal
02

The Charcoal

Skewers meet live coals. Fat drips, smoke rises, edges catch — the sound and scent every desi kitchen is built around.

The Karahi
03

The Karahi

Tomato, black pepper and green chilli tossed over fierce heat in a heavy wok, finished the moment the oil separates.

The Dum
04

The Dum

Sealed, slow and patient. Steam does the work until lamb falls from the bone and rice carries every note of the spice.

Our Standards

What we refuse to compromise

Simple rules, strictly kept — every single service.

Real Fire, Real Flavour

Charcoal grilling, not shortcuts. Smoke is a seasoning we refuse to fake.

Cuts We Stand Behind

Quality meat, trimmed and prepared in house — the same standard we serve our own families.

Cooked to Order

Karahi and grill fired when you order, so nothing sits waiting under a lamp.

Spices Ground Fresh

Whole spices, roasted and ground in small batches. Aroma you notice before the plate lands.

The Table

Desi hospitality, the way it should be

In our culture, food is never just food. It is how we welcome people, mark occasions and hold a family together for an hour longer than planned.

So we cook for sharing. Mix grills stacked high, platters made for the middle of the table, naan torn and passed around, a whole lamb dum pukht for the moments that deserve it.

Come as a couple, a family of ten, or a party of forty — you will be looked after the same way.
